
Flour Moon Bagels, the bakery known for photo-ready New York-style bagels, is planning to open a food truck on Tulane University’s Uptown campus this fall. The truck is set to start service in October.
The truck will be open on campus 8 a.m. to 2 p.m., Wednesday through Saturday, and will accept WaveBuck$. Students can also place orders on the Grubhub app.
The location of the food truck is undecided, but owners Breanne Kostyk and Jeff Hinson hope to be set up during football games and university events.
Outside of bagels, toppings and spreads, the food truck will carry a limited version of Flour Moon’s other menu items, including their popular breakfast sandwich and chopped cheese.
Flour Moon was founded in 2020 by Kostyk, inspired by her time in college in Brooklyn, New York, out of Kostyk’s home kitchen. In 2022, Kostyk and her husband, Hinson, opened their first storefront in Mid-City.
Hinson graduated from Tulane in 2007 with a degree in media arts and English. When the bagel shop in Mid-City became popular among students, Hinson and Kostyk started looking at getting their own footprint on Tulane’s campus.
The bakery has amassed over 20,000 followers on Instagram for its aesthetic videos of decked-out bagel sandwiches and bright decorations. With a degree in graphic design and experience as a fine dining pastry chef, Kostyk runs Flour Moon’s Instagram, which Hinson called the secret to their success.
“I really took [to] using a plate as a canvas. So you can see in a lot of our tartines now that they’re beautifully composed,” Kostyk said. “We never really wanted it to be like a bodega or deli. We really wanted to bring something new to the scene.”
Earlier this school year, Flour Moon gave out bagels on McAllister Drive to give students a “sneak peek” of what they can expect when the food truck arrives in the coming weeks.
“We’re so excited because we do have a lot of students from Tulane that travel to see us, but we’re excited to bring it closer, because there’s still so many students that really don’t know about us,” Kostyk said. “We’re hoping, if they like the product, that they’ll come experience the shop.”
For students who are new to Flour Moon, Kostyk recommends the breakfast sandwich.
“I think we have the best breakfast sandwich in the city. Maybe I’m a little biased, but it’s fantastic,” she said. “Our bagels are all hand-rolled [and] kettle boiled. They are sourdough. So, it’s just a really unique product.”

The breakfast bagels are my favorite and the Flour Moon shop has something for everyone’s taste. I stopped by before a doctor’s visit recently and purchased a variety box of bagels. The packaging was so beautiful and the bagels got rave reviews. I highly recommend this one of a kind place to visit to eat or just hang out on the breezy porch area. I just wish they were closer to my home but I visit every time I am in New Orleans.
